Italian Cavatelli with Bacon and Pumpkin

 

 

 

 

Special recipe from Piemonte!

 

 

Serves 4

400 g cavatelli pasta

200 g bacon

450 g pumpkin

2 sprigs thyme

1 bay leaf

olive oil

salt

pepper

 

 

METHOD

 

Clean the pumpkin and chop finely.

Place on a lined baking tray with the thyme and bay leaf, drizzle with oil and some salt and pepper.

Bake at 180 ° for 15 minutes, or until soft.

Remove and set aside.

Cook the cavatelli.

Meanwhile, heat some oil in a pan and sauté the bacon for a few minutes before adding the pumpkin.

Drain the pasta and add to the pan and toss for a few minutes before serving hot.
