How To Prepare Authentic Italian Lemon Chicken









1 fresh Broiler Chicken, spit in half

¼ cup Olive Oil

4 cloves Garlic, peeled and sliced thin

2 Lemons, squeezed of their Juice

¼ teaspoon Red Pepper Flakes

¼ teaspoon Sicilian Sea Salt

½ teaspoon Black Pepper

½ cup fresh Parsley, washed and chopped

1 Lemon, sliced thin for garnish




Place chicken in a large bowl with olive oil, Red Pepper, lemon juice, garlic, half the Parsley, and half each of Slat & Black Pepper.

Let marinate for at least 3 hours or over night.

Mix every hour or two so the chicken gets fully marinated. Remove from refrigerator and pat dry with paper towels.

Put ¼ cup olive oil in a large oven-proof frying pan that is big enough to fit the 2 chicken halves.

Turn heat to high and put the 2 chicken halves in the pan skin side down.

Cook on high heat for 8 minutes. Turn oven on to 400 degrees. Turn chicken over to second side and cook on high heat for 7 minutes.

Turn oven down to 375 degrees and cook chicken until done (about 15 minutes). Serve each person a half or quarter of a chicken, depending on what you prefer.

Serve the chicken with roast or boiled potatoes and or some nice greens like; Escarole, Broccoli Rabe, or Green Beans.
